Kiwis
Peel the kiwis, cut two of them into slices, and roughly dice the rest. Marinate with the sugar, orange juice and liqueur in a cool place.
Orange mousse
Place gelatin in cold water to swell.
Put the orange juice and the juice of one lemon with the orange peel in a large enough bowl. Beat with the egg yolks and half of the sugar in a water bath (must not make !!) until the eggs bind (5 to 7 min). Then whip the cream until cooled.
Squeeze the gelatin, melt it with the liqueur in the water bath and fold it into the cream.
Whip the egg whites with the remaining sugar in a water bath (heat: body heat). Whip until cold and fold into the orange cream.
Arrange
Arrange the fruit in glasses and spread the orange cream evenly on top. Chill in the refrigerator for 2 to 3 hours.
