Cut the chili peppers in half lengthwise, remove the seeds and chop very finely. Then rinse your hands very neatly. Peel the onions and cut into small cubes. Peel the garlic and press it through a press. Put everything in a large enough bowl.

Bring the vinegar and water to a boil and pour over the chili mixture. Add oil and salt and mix everything together well. Set aside to cool for 1 hour before serving.

Bring garlic cloves, diced unripe turmeric, salt, papaya and malt vinegar (substitute apple cider vinegar) to a boil and simmer on low heat for 1-2 min while stirring.

It goes well with egg dishes and fresh white bread. It tastes especially good with stockfish balls.
