Peel the cucumbers, cut into quarters and remove the seeds, then cut into slices 2 cm thick. Mix with salt and place in a baking dish for about 3 hours. Later, spin dry in a salad spinner or a clean gauze cloth. Boil the ginger syrup with vinegar, sugar and water. Layer the finely sliced ginger with the cucumbers in jars and pour the boiling broth over them. Close the jars and leave them to cool.
These ginger cucumbers with tartar and a very dry sparkling wine are a real seduction meal. It does not always have to be caviar!
