Heat the butter and oil in a large pot over medium heat. Add the onions, put the lid on and cook for 10-12 minutes.

Add the garlic and season with salt and pepper. Reduce the heat slightly and sauté the onions in the open pot for 30-35 minutes until golden brown. The darker they get, the more often you need to stir. While doing this, also scrape the set from the bottom of the pot periodically.

Sprinkle the flour over the onions and stir well. Pour in the white wine and bring to a boil for 1 minute. Pour in the fresh beef broth and bring to a boil, stirring vigorously over the bottom of the pot to bind the flour.

Reduce heat, add cognac or brandy and simmer gently for 45 minutes, stirring occasionally.

Toast bread in preheated oven on one side. Turn, sprinkle with cheese and bake until cheese melts.

Place a slice of baguette on each plate, add the onion soup and serve.
