Cut the potatoes lengthwise into very thin slices on a slicer. Place them in a bowl of water to wash off the cornstarch. Then place the slices on a dry kitchen towel.

Then cut vertical strips in each potato slice at a distance of 1 cm. Weave strips of ham, slices of smoked salmon or anchovies between the slits of each potato slice.

Bake the potato chips in hot oil at about 160 degrees until golden brown and drain on a kitchen towel. Finally, season the chips with the salt and bell pepper mixture and bring to the table.
