Instructions:

Place the pollock fillets side by side on a large platter or possibly directly on the surface. Sprinkle the fish with juice of one lemon and dust with paprika. Top each with a slice of cheese.

Remove the skin from the onion and cut it into rings. Cut the gherkin into strips. Spread both evenly on the cheese. Roll up into rolls and pin with toothpicks.

Turn the rolls in flour to the other side. Fry in hot butter for 10 minutes until golden brown. In the meantime, mash the cream cheese with a fork and mix with the whipped cream until smooth. Stir in the remoulade and the capers. Serve separately with the roulades.
