For the curd strudel, separate eggs, beat egg whites with salt until snowy. Mix curd with yolks, sugar, softened butter, vanilla sugar and lemon zest, fold in beaten egg whites and raisins.

Remove strudel dough from package, roll out on a moistened cloth and brush with butter, spread curd filling on the upper third, fold in sides of dough and roll up strudel.

Butter a high square baking dish and place the strudel in it, brush with the remaining butter. Preheat the oven to 200 °C and bake the strudel for about 45 minutes until golden.

Sprinkle with sugar.
