The basic recipe is shown here using the example of cream of celery soup.

First peel the celery and cut it into pieces. Clean the leek and cut into rings.

Sauté the celery cubes and leek rings without coloring them (sautéing creates aromatic substances).

Add rice flour (or wheat flour) and sweat.

Add cooled clear soup in small amounts, stir, bring to a boil, skim, continue cooking slowly.

Add celery (or other vegetables of your choice) and cook. This gives the soup its typical flavor.

When the celery is soft, puree the soup and strain if necessary.

Then stir whipped cream into the soup and heat everything together just once more.
