Instructions:

Preheat the oven to 185 °C. Grease a muffin tray with butter or line with muffin cups.

Mix the dough according to the basic recipe, then divide into four bowls and color each portion of dough with a food coloring (blue, green, yellow, red). You can mix in more or less color, depending on the color intensity you desire: For more “pastel” cupcakes use very little color, for “gaudy” use a little more.

Now layer the batter into the cups: To do this, pour 1 tsp of each color of batter into the cups one at a time until the batter is used up (e.g. in the order: red, yellow, green, blue).

Put the muffin tray into the preheated oven and bake the cupcakes for about 12-15 minutes – be sure to keep an eye on the cupcakes so they don’t brown! (If they did, the coloring on the outside wouldn’t show up well.) Let cupcakes cool completely.

Meanwhile, make the frosting according to the basic recipe as well. Pour into a piping bag with a serrated nozzle and pipe in a circle on top of the cupcakes.

Decorate with sugar rainbow, pearls or sprinkles as desired.

Refrigerate cupcakes until ready to serve.
