For the coconut balls, mix the coconut flakes with the vanilla sugar and the powdered sugar and breadcrumbs. Stir the jam until smooth and add to the dry ingredients and mix.
Melt the couverture with the coconut oil in the microwave or water bath and stir into the mixture. Allow the mixture to set for about 20 minutes.
If the mass is still too soft to form balls, you can add breadcrumbs. If the mass is too dry, simply mix in some more jam.
Form small balls and roll in coconut flakes and/or cocoa powder.
