For the chocolate nut pancakes, mix milk, salt, flour, eggs and mineral water until a homogeneous mass is formed. If the dough is still a little too liquid, add a little more flour.
Heat the butter in a pan and fry the mixture in portions to make pancakes. Mix almonds and powdered sugar, put a small part aside, spread the rest on the pancakes and roll them up.
Melt the chocolate in a water bath. In the meantime, whip the whipped cream until stiff and drizzle the chocolate over the nut pancakes, placing a dollop of whipped cream next to them.
Serve the chocolate-nut pancakes sprinkled with the remaining nut-dusted sugar mixture.
