Separate the eggs. Whip the egg whites to egg whites.
Beat the egg yolks with the butter until creamy.
Fold in the sugar, hazelnuts, flour, rum flavoring, baking powder, cardamom and the grated chocolate.
Gently fold in the snow.
Pour the batter into a greased loaf pan and place in the cold oven.
Bake at 170 °C for about 60 to 90 minutes. Do not open the oven for the first 50 minutes.
Let the cake cool in the slightly open oven.
Melt the chocolate glaze in a water bath and apply to the cooled cake.
