First clean the chicken wings. To do this, cut away the tip at the joint and make an incision at the bottom. Then peel off the skin with a tea towel over the bones. Do the same with the remaining wings.
For the BBQ sauce, peel the onions, garlic and ginger. Blend in a food processor with the chili pepper to a fine paste.
Sauté in a saucepan with the spices, herbs and brown sugar in a little olive oil for 5 minutes.
Then deglaze with the orange juice and reduce a little. Add the ketchup, mustard, Worcester sauce and paprika powder and simmer over low heat for about 30 minutes.
Strain the sauce through a sieve and season with salt and pepper.
Marinate the chicken wings in half of the BBQ sauce for 1 hour, then roast in the oven at 160°C for about 15-20 minutes.
Arrange some of the remaining BBQ sauce on small plates and add the chicken wings. Garnish with a coriander leaf or parsley.
