For the cherry pastry with puff pastry, roll out the puff pastry and divide it into 10 parts. Brush all edges of the pastry with cold water. Mix cherry jam with bitter almond.

Spread cherry jam on 1/3 of the pieces, cut 2-3 times on the other side with a pastry wheel, fold together.

Place on a coated baking tray. Preheat the oven to 180 °C and bake the pieces for about 25 minutes until golden brown.

Remove from the oven and sprinkle the finished cherry pastry with sugar.
