For the carrot and pea soup, dice the onion, finely chop the garlic, wash and dice the carrot.
Cut the leek into fine strips. Heat the olive oil in a pot and sauté the onion, garlic and carrots.
Pour in the vegetable soup. Add the leek, rosemary and thyme and cook for 10 minutes.
Now add the peas and cook for another 3 minutes. Season the soup well with salt & pepper.
Serve the vegetable soup hot and sprinkle with the grated parmesan.
