Instructions:

shallow plate as a mirror. Caramelize the halved kumquats in sugar, extinguish with port wine, boil and thicken with cooled maizena (cornstarch). Cut the mozzarella into slices and place on top of the sauce. Drizzle the kumquat compote over the mozzarella and decorate with powdered sugar and mint leaves.
