Instructions:

1. carve cabbage head into leaves and layer in a bowl.

2. boil sugar, salt, vinegar and a little lime zest, pour over cabbage leaves while still hot.

3. cover the leaves with plastic wrap and weigh down with a weight. Refrigerate for 48 hours.

4. to serve, wrap leaves individually into tight rolls, draining well.

Enjoy plain or as a side dish. Can be kept in the brine for up to a week.
