Carve each chicken into 6 pieces, rinse and dry. Peel shallots and garlic clove. Chop garlic very finely or press through a garlic press. Clean mushrooms and cut in half. Clean tomatoes, rinse and cut into wedges, chop kitchen herbs.
Heat sugar in a frying pan until it melts and is golden brown. Add shallots, caramelize briefly and extinguish with vinegar. Add the mushrooms and tomatoes. Season with salt and garlic, pepper, bay leaf and herbs and make 5 min. at high temperature.
Empty the vegetable mixture into an ovenproof dish. Add chicken pieces and season with salt and pepper. Steam in heated oven at 200 °C for about 40 min. Season again and garnish with herbs if desired.
Our tip: As an alternative to fresh herbs, you can also use frozen ones – these are also characterized by a fresh taste!
