Cranberry foam:






Instructions:

20 min, simply mix flour, eggs, cottage cheese, a little salt and vanilla sugar until smooth. Carefully fold the blueberries into the curd dough.

Heat a little bit of butter in a frying pan. Use a spoon to cut out ducats with a diameter of 4 to 5 cm from the dough and bake them on both sides until golden brown.

For the cranberry foam:

Whip the cream until very firm. Stir the yogurt with the wild cranberry compote, fold in the cream.

Arrange blueberry curd ducats with cranberry foam on plates, garnish with lemon balm.
