For the brown bread, first mix rye meal and crumbs from stale or dry bread in a baking bowl with the hot water and leave to rise for at least 60 minutes with the lid closed.

Later, add the remaining ingredients to the cooled mass and knead thoroughly. Pour the soft dough into a greased bread pan and let it rise again with the lid closed until the dough volume has approximately doubled.

Before baking, brush the top of the bread with water and sprinkle with fine meal.

Place the brown bread in the oven preheated to approx. 250 °C. Immediately reduce the oven temperature to 170 °C. Baking time is about 2 hours.

After baking, brush the oven-warm brown bread with a little water.
