For beans with pumpkin soak beans in water for 6 h. Cook with fresh water on the stove with the lid closed for 2 h until they are soft. If necessary, add a little water – the beans should be just covered.
Peel and finely dice the onion. Peel the pumpkin and remove the seeds. Cut the flesh into cubes of about 1 cm.
Blanch tomatoes in boiling hot water, skin, stone and chop coarsely, cut out the stalks. Strain the corn.
Heat the oil and sauté the onion cubes until translucent. Add pumpkin cubes, bell pepper and oregano, season with salt and bell pepper.
Stir-fry everything for 5 minutes over medium heat. Add the beans with the cooking liquid and the corn. Cook beans with pumpkin for another 5 minutes and serve as a main dish or side dish.
