Preheat oven to 180 °C.
Plate the cutlets, then fill with banana (I), baby apples and basil leaves. Close the roulade with toothpicks, sear in oil and cook in the oven at 180 °C for another 10-12 min.
For the sauce, fry banana (Ii) in butter, season with curry and extinguish with the juice of baby apples and a dash of white wine. Add a stock cube to the sauce.
Sauté spinach in oil with the garlic and then add a knob of butter.
Pour the sauce over the spinach, arrange the roulade on top, cut into slices, and bring to the table.
