For baked mice, mix sugar, vanilla sugar, eggs, rum, salt and curd with a mixer. Then stir in the flour and baking powder.
Meanwhile, in a high pan, heat oil until hot. Cut out gnocchi from the dough with a spoon and fry them in the floating fat.
The mice should turn golden brown. Lift out of the fat and drain on kitchen paper. Sugar the baked mice and serve with applesauce.
