For the apple tart with almond flakes, mix the melted butter with the powdered sugar, vanilla sugar and eggs until fluffy. Mix in the flour and baking soda.
Spread into a greased and floured small springform pan (diameter 20 cm).
For the topping, wash the apples and cut into small pieces. Mix in a bowl with the lemon juice. Heat the butter and briefly sauté the apples, vanilla sugar and cranberries in it.
Spread the apple topping on the cake. Bake in the oven at approx. 180 °C until almost done. In the meantime, prepare the glaze. Heat the butter and brown the cane sugar in it. Add the flaked almonds and honey.
Spread the glaze on the almost baked cake while it is still hot – finish baking (approx. 15 min.) until the almond flakes are nicely browned.
