Remove the fat layer from the roast beef and rub the meat with salt and pepper. Sear on both sides in the heated oil. Remove and spread the roasting pan with a sheet of aluminum foil. Place the meat on it and put it on the 2nd rack from the bottom in the oven heated to 150 °C. Roast for 60 min.
In the meantime, chop the parsley for the crust and mix it with the soft egg yolk, mustard, butter and herbs de Provence. Remove the crust from the white bread and crush it in a hand mixer. Stir into the butter mixture. Season to taste with salt and freshly ground pepper. 3.
Remove the roast beef from the oven. Spread the crust evenly over the meat and press well to smooth. Slide the meat under the heated broiler and allow to brown for 5 minutes.
