Divide all herrings, remove backbone and cut into large cubes.
Peel apples and carrots and dice them together with the cucumbers. Peel the onion and chop very finely.
Mix with salt, pepper, sugar, mustard and some lemon juice.
Mix well cream and mayonnaise and fold in.
Arrange the herring salad on lettuce.
Decorate with half of the herring fillet and garnish additionally with cucumber slice and egg slices.
If available, tuck in some curly parsley before serving.
