For the lentil noodle casserole, first prepare the sauce. To do this, chop the onion and garlic and sauté in olive oil until translucent.

Clean and slice the mushrooms and dice the carrot – add both. Then add the minced meat and stir well.

Sauté for a few minutes, then add the tomatoes. Add salt, pepper as well as pasta seasoning and simmer for about 30 minutes.

In the meantime, cook the pasta al dente (by no means too soft, the lentil pasta will still cook in the oven!), mix it with the sauce and some freshly grated Parmesan and put it in an ovenproof casserole dish.

Bake at 170 degrees for about 20 minutes, sprinkle with freshly grated Parmesan.
