For the potato rösti with cheese, peel, wash and coarsely tear the potatoes, squeeze well. Mix the potatoes with egg, cornflour, nutmeg, salt and pepper. Coat large round cookie cutters with oil.
Heat fat in a frying pan, divide potato mixture into 8 parts and portion into the rings, pressing flat. After 4-5 minutes, remove the ring and turn the rösti.
Place a slice of cheese on every other rösti and cover with a rösti. Preheat the oven to 180 °-c and bake the Rösti until the cheese has melted.
Arrange the potato rösti with cheese and serve.
