Clean the lettuce and wash in lukewarm water (removes bitter substances). Drain well or spin dry. For the marinade, boil the cooked potato in salted water, peel and strain while hot. Stir with vinegar and oil to make a creamy sauce, diluting with a little soup or water if needed. Season to taste with salt and pepper. Dress the potato salad with the potato dressing. Brush with chopped egg and garnish with roasted pumpkin seeds and/or daisies according to personal taste.
