Slit the vanilla bean and scrape out the pulp. Bring the pod and the pulp to the boil in a saucepan with the salt, sugar, milk and whipping cream.
In a baking bowl, mix egg yolks with a little hot vanilla milk with a whisk, then stir into the boiling vanilla milk.
Remove saucepan from the kitchen stove and continue whisking the vanilla milk until a creamy sauce forms.
Chill.
