For the tomato frittata, first preheat the oven to 180 degrees top heat or grill function.

Dice the tomatoes and fry them in hot oil in a medium sized pan. Add eggs, salt and mix “sloppily”.

The tomato pieces should be evenly distributed in the pan and surrounded by egg. Place the pan in the oven and finish baking the frittata.

The egg should be set but not browned. This will take about 4-5 minutes.

Slide the tomato frittata onto a plate, sprinkle with chopped parsley and serve with whole wheat bread.
