For the baked chocolate pudding, preheat the oven to 180°C degrees and grease an ovenproof baking dish. Melt the chocolate together with the coffee and whipped cream in a bain-marie.
Add the sugar, vanilla sugar, salt and 15 g of butter to the chocolate mixture and also melt. Then remove the pan from the bain-marie and allow to cool slightly. Add the well-beaten egg yolks to the chocolate mixture, stirring constantly. Then stir the breadcrumbs into the mixture and let everything cool down well.
Finally, beat the egg whites until stiff and fold into the mixture. Pour the chocolate mixture into the baking dish and bake for 45 to 50 minutes in the oven at 180°C. Serve the baked chocolate pudding.
