For those who love strawberries:
Leave the butter out in a frying pan and sear the ribs briefly on both sides, pour on a little water, cover the frying pan and steam on low heat for 1/4 hour. Later, put the not too moist sauerkraut in a saucepan with the peeled and coarsely chopped onions, the crushed juniper berries, white wine, enough pepper and 1 stick of butter and mix together. Steam everything together for about 5 minutes until the onions have become translucent. Finally, form the ribs with the gravy on top and steam for a few more minutes at medium heat. Serve with the separately cooked pears and mashed potatoes.
