Peas peel or possibly defrost. Chop onions. Sauté in one tbsp. butter. Sauté peas briefly. Add Noilly Prat and water. Cover and simmer for about ten minutes.
Remove half of the peas. Grind the rest. Add sour cream or crème fraiche. Rinse radicchio and cut into strips. Add to the sauce with the peas. Steep briefly.
Heat gnocchi in boiling salted water. Pluck sage leaves and roast in the remaining butter. Season pea sauce with salt, cayenne pepper and juice of one lemon. Mix with the gnocchi. Sprinkle sage on top.
