Cut the melanzani into slices and season with salt, infuse for 15 min. Press garlic through garlic press, cut feta cheese into small cubes, pluck thyme leaves from stems. Rub melanzani dry with paper, heat oil, fry melanzani until golden and remove. Sauté garlic. Add thyme, melanzani, tomato sauce. Stir and add feta cheese and season to taste with salt and freshly ground pepper.
