For the pancakes a la orange, sift flour into a large enough bowl, season with salt.
Mix eggs with buttermilk and slowly add to the flour until the batter is smooth.
Heat a coated frying pan, brush lightly with oil and bake 12 pancakes from the batter in sequence. Always grease the frying pan lightly in between.
Mix the marmalade with the orange juice until smooth and pass through a sieve as required. Spread thinly on pancakes and keep hot in oven until ready to serve.
Rinse oranges and cut all but one half into very thin slices. Scrape the peel off the orange half with a kitchen knife or cut into very fine strips.
Arrange these together with the orange slices decoratively on the pancakes and serve the pancakes a la orange.
