Score the meat lengthwise and unfold. Rub all over with cumin, pepper and paprika. Season the inside surfaces with salt.
Mix the minced meat with the ingredients for the filling and put it on the meat. Form into a roll and tie tightly.
Heat oil in a roasting pan and brown the meat. Pour some clear soup. Put the roaster in the oven heated to 200 °C and roast for 75 to 90 min. gradually pour the rest of the clear soup.
Peel and halve the onions, clean the peppers and cut them into rings. Add 10 min before the end of roasting time.
Cut the roast into finger-thick slices. Serve the strained gravy separately.
Serve with stewed cabbage and potatoes.
