Put the washed beef in a large saucepan, as well as the peeled onion and the celery stick. Add the water and season with a little salt. Slowly bring to a boil, skimming off any foam that rises a few times. Cover and simmer for 5-6 hours more than make.
Pour the soup through a sieve in which a crockery hangl is placed. Cool and lift off the layer of fat that forms. The clear soup should be completely clear. It is served hot or used as a base for other dishes.
