For the spelt vegetable loaf, first boil the spelt meal in the vegetable soup and let it swell for about 20 minutes.
In the meantime, peel onion, chop finely and sauté in a little oil.
Cut vegetables very small and blanch (e.g. broccoli, kohlrabi, peas, zucchini, carrots, etc.).
Mix all ingredients and add breadcrumbs to form a malleable mass, season well with salt and pepper.
Shape the mixture into small loaves, roll them in breadcrumbs and then fry the spelt-vegetable loaves in rapeseed oil on both sides.
