Prepare a smooth batter with cornstarch, flour, egg and 125 ml of cold water and cook in a cool place for half an hour. Remove the skin from the apples, core them and cut them into slices or wedges the thickness of a centimeter.

Heat the frying fat. Pull the apple pieces through the batter and fry them in the oil until golden brown. Drain on kitchen roll. For the caramel, stir sugar, 6 tablespoons water and the sesame oil in a small frying pan and cook to a golden syrup. It has the right consistency when a drop of it hardens in the iced water. Turn the apple pieces to the other side so that they are completely covered with it, dip them into the iced water for a short time so that the caramel solidifies and bring them to the table on the spot. The fruit should still be slightly warm inside.
