For the zucchini boats, cut the zucchini in half and remove the seeds with a spoon. Wash and drain the spinach, cut the tomatoes and feta into small cubes.
Mix the spinach, tomatoes, feta, whipped cream, balsamic cream and the spices, then stuff into the hollowed out zucchini.
Place the “boats” in an ovenproof dish and bake at 180 °C for 20-30 minutes.
