1) Beat the egg yolks, powdered sugar and vanilla sugar until thick and fluffy. Add the flour to the mixture.

2) Preheat oven to 180 °C.

3) Place the mixture in a pastry bag with a smooth nozzle and form small biscuits. Brush with beaten egg and bake. Then assemble with warmed apricot jam.
