For the wild garlic spaghetti, wash the wild garlic and cut into small pieces. Sauté in olive oil, add the mascarpone and let it melt. Do not bring to the boil.
Season with salt and pepper, mix coarsely with a blender. In the meantime, cook the spaghetti al dente.
Add 1 to 2 ladles of hot pasta water to the sauce and mix with the pasta. Sprinkle the wild garlic spaghetti with freshly grated Parmesan and serve immediately.
