Cut the meat into bite-sized cubes (approx. 3 x 3 cm). Heat the clarified butter (1) in the roaster and sauté the onions until translucent. Add the meat and brown, season with salt, pepper and caraway. Add half of the clear soup and the beer (1).

Stew the meat quietly for ninety minutes at low temperature with the lid closed. Halfway through the cooking time, add the rest of the clear soup. Five minutes before the end of the cooking time, add the beer (2).

Remove the skin from the apples, cut them into quarters, remove the core, cut them into coarse cubes and dust them with flour. Heat the clarified butter (2). Roast the apples in it for five minutes, drain, spread evenly on the beer meat and bring to the table.

Glitscher (potato cookies) go well with this.
