For the tarte flambée with bacon and onions, empty the flour onto a surface, make an indentation, chop the yeast into cubes and place in the center with a little water. Add a little flour, let rise briefly and season the edge with nutmeg and salt, sprinkle with sugar.
Add the egg, olive oil and egg yolks and knead into a smooth dough while adding water. Roll out the dough thinly, spread baking sheet with parchment paper, place the rolled out dough on it.
Mix salt, sour cream, chives and pepper, as well as some of the thyme and chopped garlic neatly and spread on the dough. Place the bacon, onions and shallots on top, sprinkle the remaining thyme and bake in a heated oven at about 190° Celsius for 25 to 30 minutes.
Serve the tarte flambée with bacon and onions warm.
