For tartar sandwiches, mix minced meat with salt, pepper, Worcester sauce, cayenne pepper and yogurt until well blended. Chop parsley, finely chop onion.

Spread equal parts of the meat mixture thickly on the prepared brown bread slices. Heat oil in a frying pan and place bread slices, coated side down.

Fry for a few minutes, flip over and fry the bread side until nice and crispy brown. Meanwhile, fry 4 fried eggs. Arrange bread slices and top each with a fried egg.

Sprinkle thickly with parsley and onion and serve immediately.
