A very tender, smooth dough that is easy to prepare. It can be used to bake sheet cakes, poppy seed or nut rolls and filled yeast pockets.

Melt the yeast in the milk. Mix the butter with the curd until creamy. Stir the honey, egg, egg yolk, cinnamon and lemon zest with the cream. Add the wholemeal flour alternately with the yeast milk. Knead the fairly soft dough briefly and heartily with a food processor. Cover and let rise in a cool place for about 50 minutes, until about doubled in volume. The dough becomes firmer during the rising and can then be further processed according to the respective recipes.
