Mix the butter with the honey until thick and creamy. Add the egg, the cinnamon or possibly the lemon zest. The last thing to mix in is the flour. Put the soft dough in a metal container with the lid closed and let it rest in the refrigerator for 3-4 hours, or better yet, overnight. If the dough is still too soft to roll out, you can chill it for another 20-40 minutes in the freezer.
