For the sweet potato gratin, boil the sweet potatoes and potatoes together in water for a few minutes until tender. Strain, rinse, peel and cut into thin slices.

Mix the sour cream, spices, milk and mozzarella in a bowl. Cut the spring onion into small slices.

Butter the baking dish and cover the bottom with a layer of sweet potato, empty sour cream sauce over it, put a layer of potato slices, empty sour cream sauce over it, put a layer of spring onion, empty sour cream sauce over it, put a layer of potato slices, empty sour cream sauce over it and finish with a layer of sweet potato.

If there is any sour cream sauce left, use it up and then sprinkle with mozzarella to bake. Bake in a convection oven at 180 degrees for about 30-35 minutes. When the mozzarella has a nice orange color, remove and serve.
