For the calamari with bell pepper ragout, chop the onion and sweat half of it in a pan filled with 2 tablespoons of olive oil on low heat until it becomes translucent. Then add the calamari, salt, pepper and let it simmer on the lowest possible heat for about an hour. About half an hour later, sauté the remaining onions also in a pan with the remaining 2 tablespoons of olive oil and add the peppers, well cleaned as well as cut into strips about 2 cm wide, and simmer covered for half an hour. In this case, the food is cooked in both pans at the same time and can now be combined in a single pan, where it is left to simmer for another ten minutes and served hot.
